Before a dish is served, I want it to look simply but elegantly plated, and I want it to be apparent that only the freshest, highest quality ingredients have gone into it. When the plate is presented in front of you and your guests, you'll respond so positively to what you see, smell, and taste like it's a new eating experience every time I cook for you. I know when I've done that, I've done my job.
